An awful lot! People have estimated from the data acquired on the Hubble Space Telescope that there are around 120 billion galaxies in the observable universe (http://imagine.gsfc.nasa.gov/docs/ask_astro/answers/021127a.html).

We don’t know how many galaxies we’ve discovered- the number is so huge, astronomers haven’t yet actually counted them all! And more keep getting discovered all the time.
We’ve discovered many tens of thousands of galaxies at least- in this Hubble Deep Field image from 1995, there are at least 3,000 galaxies (http://hubblesite.org/newscenter/archive/releases/1996/01/image/a/format/zoom/)
And in this newer image, astronomers have been able to count at least 10,000!
As Jack says, we think there are maybe 120 billion galaxies in the observable Universes.
